Scrambled egg note* water makes eggs fluffier, add about a tablespoon to two eggs. Also SEASON after you whisk. I know she did, but just season everything. Salt, pepper, and I like to add a bit of fresh parsley. Gives it a bit of green and some nice flavor.

I personally prefer eggs over easy. I start with oil and then add butter after I flip and then flip back over after the top is cooked. Then I’ll season right at the end and then serve.

The fried egg: Olive oil really changes the flavor of the egg. Not s big fan. Either butter or plain canola oil. The Trader Joe's oil. And olive oil heats slower than butter or canola oil. Takes the egg longer to cook; absorbed more oil. Don't like oil soaked eggs. Yuck.

Despite her disgusting fried egg, the way you fry an egg is poach it in butter with no color and very little heat, she did everything else perfectly, other than the omelet but that's really hard to do correctly, she completely butchered it. This how you cook eggs, every time I see people overcook their eggs and end up with these little pellets of overcooked dog food I cringe.

That fried egg with the oil and crispy brown edges is EXACTLY how I love my fried eggs, especially with white rice and a Vietnamese style fried pork chop. As for scrambled, I do a variation of Ramsey's style (I skip the cream) where I cook it in a pot with a big dollop of butter and stir it on the heat and don't salt and pepper it until after I take it off the heat. As for poached, the first time I tried, I was using Julia Child's recipe which called for vinegar, and I'm glad Carla found the vinegar to be useless unless you put so much in that your egg will get that taste. When I want to do the "French" omelette, and I don't wanna get fancy, I do what Julia Child does. High heat with butter, put the whisked eggs on the pan and do the pulling the pan towards you method to get the egg to naturally shake itself in an Omelette form. Takes like 10 seconds.
